In one of my earlier posts, I confessed to the world how I royally suck at doing my hair! No matter how hard I try, I always find myself struggling on the 10th hour of a 5-minute tutorial!

Well…I have another confession to make!

I just don’t enjoy cooking! I…really…don’t! Explains why I was fit when I was living on my own. My enthusiasm for cooking allowed for an egg, cheese sandwich or baked fish on good days, but on most days I talked myself even out of those to simply settle for a bowl of cereal.

How to Eat Healthy in 2015

This is ME when someone says “diet?”

I am SURE as hell one of your New Year Resolutions is to eat healthy, a resolution which will approximately last 100% successfully until V-Day at which point it will begin to crumble. And then subsequently all hopes of eating healthy will be diminished by Easter.

If this doesn’t sound like you then you’re that disciplined moron I come to envy each year!

Last year as my 2014 resolution, I took on the task to find ways to eat healthy, happy and consistently. Healthy eating will produce the results you want if it has a chance at becoming an ongoing part of your life as opposed to being part of some seasonal diet plan. To accomplish that, healthy eating is something you must enjoy and do consistently so your body has enough time to adjust to it to begin producing results you desire.

Very soon my Pinterest page became a repository of all meals quick, budget-friendly and healthy. But Pinterest to me is like poison for the OCD! I’d get on Pinterest at 12:00 pm to look up a recipe only to find myself reading how to DIY cuff links for my dog by 12:07 pm! I needed a better, more efficient route for my OCD mind if I wanted to get on a healthy & consistent plan.

I have NO clue how I ended up discovering my first healthy-eating resource on Instagram. Must have been me living the same “healthy recipe to DIY cuff links for dog” moment on Instagram but anyhow, point being, Instagram is actually a pretty good resource for quick, delicious and healthy recipes only if you know where to click.

So…today, I will share with you 5 Instagrammers I follow for healthy recipes. They’re all actually pretty awesome and only a few clicks away on your phone with recipes available right on their Instagram page (meaning no need to visit their website). I can look them up quickly while I’m standing at H.E.B dazed and confused in the middle of the day wondering “what the hell to cook…”

  1. healthier.food.choices – calorie-friendly, easy-to-make, savory dishes with ingredients most likely already present in your kitchen pantry
  2. missk_j6 – indulge your sweet tooth in delicious dessert recipes (I’ve already tried a few & they were a hit!) including many ideas on low-calorie baking substitutes (may have to pay a visit to your local organic food store for some of these ingredients)
  3. videomeals – my personal favorite, a collection of 10-15 second videos of quick meals
  4. meals4fitness – a great resource for snack-lovers or as I like to call them “snackers”
  5. cookinwithmima – for your vegan needs but don’t let the “vegan” discourage you from paying a visit to her IG page

Thai Green Papaya Salad

One of the most treasured memories you’ll bring back from your traveling adventures are local cooking lessons! If you are planning to travel to Turkey, Thailand, China, Italy or anywhere in the world and you like to eat, then I kid you not, breaking away from the monotony of tour guides and shopping sprees to indulge in a 1/2 day spent at a local cooking school will be an investment you will cherish for life! Not only it’ll give you a chance to immerse into the local culture, it is fun, you get to meet travelers around the world, make new friends and most importantly, you bring back home exciting recipes to show off to your friends!

There are ways to go about researching which cooking class to attend – TripAdvisor, Lonely Planet, Rick Steves or simply, ask the hotel you’re staying in for recommendations. Because that’s how we ended up at The Blue Elephant Cooking School in Bangkok last year during our two-week trip to Thailand. The staff not only recommended the school, they even went ahead and made reservations for us. Turned out to be one of the best moments of our trip!

Today, I will share a simple recipe for Green Papaya Salad from The Blue Elephant cookbook which I bought on my way out (another great investment!). I was introduced to Papaya Salad during my trip to Chiang Rai in Thailand. Our tour guide had us stop at a local hole-in-the-wall for lunch and I swear, that day I had the best Thai food of my life…and discovered this quick salad which I now consume for a quick lunch quite frequently.

Tips:

  • You can find these ingredients at Asian supermarkets (yelp it!). If you are in Houston, your best bets are Asia Market in The Heights or 99 Ranch Market and Super H Mart in Memorial. I personally like Asia Market, it’s small so no overwhelming aisles and the staff especially the owner are very sweet and extremely helpful. They are more than willing to provide a one-on-one shopping experience and at times, will give their recommendations on what brands to purchase.
  • I learned in Thailand the best way to capture true aroma of Thai spices in your dish is to use a mortar to mix your spices preferably one made of stone as seen here on Amazon. I already bought mine at a local Indian grocery store and have used it since for Indian and Thai recipes.
  • Many Asian supermarkets have pre-shredded green papaya which is what I used for this recipe. I bought mine at Asia Market. However, if you want to be the Indiana Jones of cooking, find whole green papaya and peel/shred it using a cheese grater, papaya shredder or a food processor with grater.

Green Papaya Salad (Som Tam)

makes 1 serving

Ingredients:

  • 1 clove garlic, peeled
  • 4 green Thai chilies
  • 1 oz French beans, cut into 3/4 of an inch
  • 3/4 oz or 1/6 cup dried shrimps (I used slightly less as this can make the salad a bit fishy and I don’t like fishy)
  • 2 tbsp palm sugar
  • 3 tbsp fish sauce (again, I used slightly less to make it less fishier)
  • 3 tbsp lemon juice
  • 2 oz cherry tomatoes, quartered
  • 1 oz or 1/8 cup roasted peanuts
  • 7 oz shredded papaya

Directions:

  1. In a mortar, roughly pound the garlic and chilies. Add the beans and pound, then the shrimps and pound again until crushed.
  2. Add the sugar, fish sauce and lemon juice and stir together. Add the tomatoes and press with the pestle.
  3. Add the peanuts and the papaya and stir until well mixed in.

Serve cold in a round dish!
